and what time of year is the best? Should we fly to Honolulu and then take the cruise or take a cruise out of California to our destination point.

The best thing to do would be to fly to Hawaii, and then ride a Norwegian Cruise Lines ship - the Norwegian Wind is a 10 day cruise between the Hawaiian islands, and it detours to a small island south of hawaii in international waters, so you would also need a passport. The other NCL ship is the "pride of america", which is a seven day cruise between the islands only, so you would not need a passport. In Honolulu, "Regal Travel" and "non-stop travel" both handle tickets for these cruises. They leave from Honolulu Harbor at Aloha Tower Marketplace.
