I went to a B&B years ago, and asked for their recipe for the DELICIOUS baked grapefruit they served in the morning. I don't usually like grapefruit, but this was incredible!! Baked Grapefruit HalvesPrep: 15 minutesBake: 12 minutesIngredients 3 red grapefruit 1 large orange, peeled and sectioned 1 medium banana, sliced 1/3 cup orange- or lemon-flavored or regular pitted dried plums (prunes), coarsely snipped 2 tablespoons orange liqueur (optional) 1 tablespoon margarine or butter, cut into small pieces 2 tablespoons brown sugar 1/2 teaspoon ground cinnamon Directions Preheat oven to 450 degrees F. Halve each grapefruit; cut a very thin slice from the bottom of each half so grapefruit will sit flat. Use a grapefruit knife or other small knife to cut around the outer edge to loosen fruit from shell. Cut between each segment to loosen it from membrane. In a bowl combine orange sections, banana slices, prunes, and if using, liqueur. Mound the orange mixture atop the grapefruit halves. Dot each half with margarine or butter. Combine brown sugar and cinnamon; sprinkle over fruit mixture. Place in a 3-quart rectangular baking dish. Bake, uncovered, for 12 minutes or until grapefruit is warm and topping is hot. Makes 6 servings.

Dutch Babies.1/4 cup butter3 eggs3/4 cup milk3/4 cup flourPut butter in a metal, glass or ceramic baking pan. Put in 425 degree F. oven while mixing batter (watch, it can burn!)Put eggs in blender or processor and whirl 1 minute. Gradually add milk, then slowly add flour. Continue mixing for 30 seconds.Remove pan from oven and pour batter into hot melted butter. Return to oven and cook until puffy and well browned (approx. 20-25 minutes)Dust with ground nutmeg if desired. Serve at once.Tastes excellent with the following toppings:Powdered sugar and lemon juiceMaple syrupFruit flavored syrup.Honey.Fresh fruit salad.Canned pie filling.Yum. My mouth is watering! I might have to make some today.

Migas: scrambled eggs with tortilla chips, and a lot of queso, served with beans and hot salsa. Easy, and cheap.Always have coffee, tea, whole milk, 2% milk, and skim milk, juices. Toast, butter, peanut butter, marmalades, honey.

Whole Wheat Apple Pancakes with Brown Sugar Glaze:INGREDIENTS:2 cups whole wheat flour 1/4 cup baking powder 1/2 teaspoon salt 2 teaspoons ground cinnamon 2 eggs 2 cups milk 1/4 cup vegetable oil 2 large apple - peeled, cored and diced 1 cup butter 1 cup dark brown sugar 2 tablespoons vanilla extract 1/2 cup dark molasses DIRECTIONS:In a large bowl, stir together the flour, baking powder, salt and cinnamon. Pour in the milk, eggs and oil; stir just until smooth. Mix in the apple. Heat a large skillet or griddle over medium heat. Coat with cooking spray. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry. Flip and cook until browned on the other side. To make the glaze, heat the butter in a heavy saucepan over medium heat. Stir in the molasses, brown sugar and vanilla. Serve warm spooned over pancake.

The batter can be mixed in the food processor, and the whole thing comes out of the oven at once: no slaving away over a hot stove while the hordes clamor for their share! Preheat oven to 425F. Melt butter over medium-high heat in an ovenproof 10-inch skillet. Add apples, granulated sugar, and cinnamon and cook, stirring occasionally, until the apples begin to brown and most of the juices have evaporated, 5 to 7 minutes. Remove skillet from heat.2. Combine eggs, milk, flour, and salt in a food processor and process until smooth. (This can also be done with an electric mixer or by hand with a whisk.)3. Spread the browned apples evenly across the bottom of the pan. Pout the batter over the apples. Place the skillet in the oven and bake until the pancake is golden and puffed, 18 to 20 minutes.4. French Toast Cassarole With Praline Topping1 loaf French bread (12-16 oz.)8 eggs2 C. half-and-half1 C. whole milk2 T. granulated sugar1 tsp. vanilla extract1/4 tsp. cinnamon1/4 tsp. nutmeg1 Dash salt1. Cut loaf of French bread into 1-inch slices. 2. Arrange slices in buttered 13 x 9-inch pan, cutting or breaking pieces to fit and squeezing in bits and pieces of bread so there is barely any space between slices.3. Combine eggs, half-and-half, milk, sugar, vanilla extract, cinnamon, nutmeg and salt. Beat with whisk until blended but not bubbly. 4. Pour evenly over bread slices, spooning some mixture in between cracks. Chill, covered, overnight.5. The next morning, prepare Praline Topping and spread over casserole. 6. Bake at 350ºF, uncovered, for 40 minutes, or until puffed and light brown. Good Morning Monte Cristo1 loaf unsliced French bread1 thin slices ham12 small slices Swiss cheese8 large California Fresh Eggs1 1/2 cups half and half2 teaspoons vanilla extractRaspberry syrupMaple syrup1. Preheat oven to 425º. Slice bread into 12-1" thick slices. 2. Slice again halfway to make a pocket. 3. Into each pocket stuff 1 slice ham and cheese. 4. Whisk eggs together with half and half and vanilla 5. Dip each stuffed slice into egg mixture and place on greased cookie sheet. 6. Bake 15 minutes on first side; turn and bake 10 minutes longer. Serve with fruit garnish and warmed syrups.

keep it simple. Not everyone likes a "farmhand" breakfast with all the trimmings. put out things like fresh breads, bagels, hot and cold cereal, fresh fruit, some hot dishes and cassaroles. You can go full out and set up omelette stations and grill stations. The more work the earlier you have to get up. You could hook up with a bakery and get the bread and some pasteries too.

Berry French Toast Bake1 loaf french bread, cut into chunksmilkeggssugar, to tasteberries (any kind) coated with sugarMix enough milk & eggs to get bread soggy. Add enough sugar to make it sweet. Using glass baking dish, do a layer of bread mixture, then a layer of berries, & so on ending w/ bread mixture. Bake at 350 (I think) till golden brown.
